High quality beef properly handled and that is fresh is typically safe. Proper and consistent TEMPERATURE CONTROL IS IMPERATIVE FOR SAFETY. Raw is fine - Medium Rare is 135 Degrees which is NOT HIGH ENOUGH to kill Certain bacteria so it is not far off to eat Raw. Beef Sushi is excellent. BTW I worked for a Food Purveyor for several years and was SERVSAFE CERTIFIED along with many Food Handling and Beef Safety Training programs. I eat my Beef Medium Rare - and that is literally EVERYDAY- Prime or Wagyu - and never felt better! Enjoy!

God had the Israelites roast their meat. That's good enough for me. It seems like there could be parasites in raw meat (I'm overly cautious, having worked in litigation for 35 years. I do like oyster shooters, but I'm not doing that anymore.) (BTW, the Festival of Testicles cracked me up.)

My kids always freaked while l made hamburger patties I would grab a chunk salt & pepper it and eat it. That's when we butchered our own cattle. I would never do that with store bought meat.

I've been eating Rae beef for years... not a pounds at a time but when I buy my ny strip in bulk and hand cut my own steaks. Little seasoning and I prefer mine very cold... slice off some as I cut steaks... very good.

I had beef tartar in Vegas at a place called bazaar meat. Raw meat seasoned with spices and then they crack a raw egg on top and they mix it up and you eat it on a cracker. kind of reminded me of eating poke.
