Marty... The science of taste is fascinating, someone tell me go and I can do a Darren Comic Corner Version

Ok so... Most of what we understand as "taste" is actually smell, researchers have determined that over 80% of what we taste is triggered in our brains by smell and our olfactory senses, with the next 15 or so percent being related to what we know as "mouth feel" the texture of food in our mouths and our perception of how it feels, crunchy, creamy, etc which is why there are so many people who don't eat certain foods because of texture or smell, the remaining percentage is the chemical interactions between our saliva breaking down food which has had its molecular flavor compounds activated by either fat (like cooking something in oil) or water (soups and broths), the flavor compounds (complex arrangements of elements like sodium and potassium), after being broken down interact with our taste buds (the taste bud map is a major lie btw we taste everything everywhere) which sends signals to our brains telling us we're having something sweet/salty/bitter/sour/umami (savory) and that's how you taste food Additional Food Corner: "spicy" isn't a flavor it is the interaction between capsaicin and you mouth as a whole, capsaicin is a toxin that triggers your pain receptors not your taste buds, so yes, spicy foods are literally causing you pain
