hey, so because you had a bunch of questions about the janchi guksu: the somyeon are the wheat noodles that are cooked separately and then put in the bowl, topped with the broth, which is made with the beef brisket, carrots, zucchini and dashida (broth flavoring, jin put in a sachet of dried dashida, which he took out later), and then topped with the scallion „sauce“. then you either mix it all up to eat or top it off with a bit of that sauce as you go.
