The texture is super soft—like the petals go all tender and pillowy when cooked. Not mushy, just… squishy in a good way? Think zucchini flower but a little more spongy, and it soaks up flavor like crazy. Raw, it's got a slight bitter/grassy thing going on, but once it hits the pan with garlic, chili, or fish sauce, it chills out and gets this deep, savory vibe.Sort of like spinach but with a mild bean pod twist. There's maybe a tiny floral note if you're paying attention, but it's not perfume-y at all.It doesn’t steal the show on its own—it’s more of a sauce-sponge kind of veggie—but toss it with shrimp or eggs, and it slaps. Definitely underrated. Would eat again.
