I think what happened to Emilia was because Subaru told Echidna that he can return by death MULTIPLE times, and because Satella couldn't reach for Subaru in that tea party dimension (showed a glimpse of Satella's hand reaching for Subaru in the last episode). She gave up so instead, she possessed Emilia who laying was next to him as punishment. Therefore Emilia turned into that whole thing.
