So to explain Dead Apostles without spoilers they're from Tsukihime the sister series to Fate Stay Night that exists in a parallel world where servants and the grail war don't exist but it has more vampires. Dead Apostles are basically Vampires on steroids that reject humanity and live based on contradictions. Dead Apostles usually are servants of Dead Apostle Ancestors who are basically vampire gods who rejected their humanity after reaching the peak of their magic with many of them living in secret for thousands of years. Because they reject humanity they have some level of resistance to human concepts like noble phantasms but if they were religious or had some deep faith in something that contraction could give them a conceptual advantage to harm him or servants with real noble phantasms who exist due to their believes and desire for a wish could overcome the contradiction and injure him. More will be explained but a lot of it is mainly info we know from playing the Tsukihime game

To give you some context Magic and Magecraft are very different and that difference is a very very big deal which is why Saber told her that he uses Magecraft not Magic. Magecraft is Magic that has been developed and turned into techniques and spells which has made them noticably weaker over time which is why in the old series they saw magic from Caster as such a big deal. Magic is abilites that aren't controlled and because of that they're insanely more powerful. To give you an example it was explained in the Heaven Feels movies that the Fuyuki Holy Grail war was originally created by the 3 families to reach the root of magic but the Einzberns wanted to use it to recreate the 3rd magic, Heaven's Feel, which basically elevates the soul into a higher being. Shirou only survived because Ilya used it on him in the cave at the end. Another magic was from the same movie where Rin used that sword which copied the 2nd Magic which allowed her to have infinite magic energy pulled in from other parallel universes. Magic is a huge deal and in a world like Fate's where for spells wording is everything it makes a huge context if someone is using magecraft or magic
