Happy Saturday, everyone!!

This week was pretty eventful - I got my first vaccination! Woooo! That will be Youtube's Tuesday video :) So far my only side-effect is a really sore arm so that's not too bad!

Looks delicious! We haven't done Tacos for ages, maybe I'll order ingredients next week. Typically we'd finish off with a sprinkle of grated mature cheddar.

I've always had cheese on tacos! But this would probably taste a bit weird with cheese... My mum's tacos were always ground beef, salsa, sour cream, cheese, lettuce!

I just got back from my main weekly shop and although I've got most of the ingredients anyway, a return trip for the tacos, avocados and the smaller tomatoes will set me up to try this on Monday!! It looks really tasty.

Glad you have had your first jab and no side effects, same here but not even a sore arm, suppose have gotten used to having the flu jab annually. Roll on the second and four weeks after, freedom!

I thought your description originally said chili cooking video so I was a little confused when you said tacos 🤣 I do have an awesome chili mac recipe for my Instant Pot which I haven't made in a while

I've decided that fish tacos are my favorite. With your other ingredients you can use any type of white fish, just crisped a bit in the fry pan. Add a touch of tartar sauce, and with avocados - - yum!

You didn't say what type of vaccine you got, but with my two-part Moderna vaccine the soreness was minimal with the first one but more more noticeable and long lasting soreness after the second injection. Good luck with that!
