The conversations in this episode between Rhaenyra/Daemon and Aegon/Otto are some of the best writing and acting, not just in HotD but in all of Game of Thrones. They're up there with Tywin/Tyrion/Cersei sparring. (IMHO, anyway.) Rhys Ifans' delivery of that line "and WHAT... has Ser Criston Cole... DONE?!" is one of my favorite lines of any movie/TV show, ever. 🤚 Also, I think the word you're looking for when Cole is being a jerk to Ser Arryk is projection. He feels like he's failed as a Kingsguard and he's projecting that onto Arryk.
