You can find all the backstories and side stories you want in the EU. People have written and made comics about virtually every character who gets screen time in Star Wars. They aren't always canon, but sometimes they are, and sometimes they become canon, or partial canon. I think there's a couple of novels and/or comics about Mace Windu, his abilities, and his lightsaber fighting style. Some interesting stuff there. I haven't read it, but I have researched it for various Star Wars projects. I want to find the Obi-Wan Kenobi novels. One about his early days on Tatooine (before Kenobi, and not certain it is considered canon anymore) is my favorite Star Wars book. Very space Western vibes. But there is a whole series about Obi-Wan's apprenticeship with Qui-Gon that came out 20+ years ago. It's hard to find now. I read the sequel series about Anakin's adolescence with Obi-Wan, and I have researched the Obi-Wan series, but I haven't been able to find it in a format and at a price point that works for me. Personally, I have only really dipped my toes into what's available in writing for the EU, and there's still a handful of TV shows, seasons, and the Christmas special that I haven't seen. I think as far as notable "origin stories" that you can watch in a visual format, with characters you already know, there's Dooku and Ahsoka origin stories available in Tales of the Jedi. That one's on my to-watch list, so I can't say whether it's worth the watch or not. I do have recommended watches for you after Clone Wars—or alongside. Star Wars Rebels is an animated take on another facet of the same era as Andor, showing another side of the early Rebellion, and it gives you a continuation of several characters' stories from Clone Wars. The Mandalorian is also highly regarded. It takes place after Episode VI but before Episode VII (and Episodes VII, VIII, and IX should be completely ignored). Boba Fett got mostly negative reviews, and I haven't seen it. Ashoka is very tightly tied to everything chronologically before it, so it's high investment, and honestly, it's not my favorite. I enjoyed several aspects of The Bad Batch but also haven't cared enough to hurry to finish the series, though it is on my to-watch list. (In short: read books, and watch Rebels and The Mandalorian.)

I'm glad you're enjoying the Clone Wars series. Fear not, there are only 7 seasons, the last 2 with fewer episodes than the first 5 seasons. Since you like origin stories, don't forget the Han Solo movie. Best to watch that prior to the sequel trilogy. I know that you have seen alot of negative comments regarding certain Star wars media. I hope you continue to follow your own path and form your own opinions. The Jedi games will really make you feel like you're in a Star Wars movie and I am so looking forward to that 😊.

Fun fact: Mace Windu's VA, T.C. Carson, was also the original voice of Kratos in the Greek games. As for character origin stories, I highly recommend reading Shatterpoint, it's a great book about Mace.

Finally, you get to start season 2 which is a really big step up in quality from the first season
