The reason why todo can’t do damage is because (and correct me if I’m wrong) cuz he isn’t aware of the outline of the soul but itadori is and that’s why he can damage mahito

As I understand it there are 2 ways of beating Mahito- a) keep damaging his soul until his dead, which is tough coz there's very few people who can do that, possibly it's only Itadori and i think Kugisaki or b) Lets not forget that manuplating souls including he's own is a result of his technique, you need cursed energy to use a technique and he heals by maintaing shape of his soul, so he's using cursed energy to heal himself, meaning even with normal attack you could beat him but it would take a lot of time of you damaging him and him healing himself, untill he's out of Cursed Energy and actually can get killed

Mahito is basically a soul cursed spirit that can change the shape of its soul and others. Think of its body as an extension of its soul so for you to beat it, you'd have to chip away at its soul, or you have to have a pretty powerful attack to physically damage it enough to affect its soul. Itadori and Sukuna know the outline of their own souls so they're able to damage somebody on a soul level and not just physically. Kugisaki had resonance which basically attacks someone 's soul directly which is how she damaged mahito. Also, strong characters like Gojo or Yuta have so much cursed energy and powerful techniques that they can easily deal a significant amount of damage even without having to figure out their own outline of their own soul.

Well, Gojo or Yuta for example would actually not do "damage" to mahito still, but their strongest attacks would still probably obliterate Mahito, as one of the proposed ways to beat him is he simply lacks the energy to keep maintaining his soul.
