I'm pretty sure your theory on click clack drawing the death star is correct as after the clone wars, the geonosians were enslaved by the empire and forced to work on building the death star and once they completed their part of the construction, the empire exterminated them to ensure its secrecy leaving only click clack and the queen egg as the sole survivors of their race

Also if you love this version of thrawn, you would probably love the original legends continuity version of his character

In Episode 2 Attack of the Clones, we saw Count Dooku and the Geonosian leader Poggle discussing the Death Star plans during the Battle of Geonosis. Count Dooku then escaped (per usual) and brought the plans to Palpatine on Coruscant. So the Death Star has been connected to Geonosis since the very beginning.

The Geonosis tunnels and opening was the exact same one from Clone Wars in those zombie episodes so makes sense it look familiar. The Geonosians were involved from the very start of the Death Star construction before they or anyone else really knew the full potential, only seeing it as another factory operation given to them by Dooku at the time. Palpatine mass genocide was just another way for him to hide the project at the cost of almost the entire species.
