The other scenario explaining the Easter traditions is that simply, like many holiday rituals,  it was a Pagan holiday, there was a fasting week celebrating Easter, rebirth.  Because they were celebrating birth and re birth eggs were not to be eaten. The eggs laid in that week were colored so as to mark them as "hands off." but  the explanation attached below makes more sense.
