JAMES D'ALESSANDRO

Your subtitles are different depending on what site you use

Zabon

The "Sir Stark" vs "Mister Stark" is just a translator difference. Since you were watching the show from various different sources, you were seeing different subtitles by different translators. In Japanese though she was calling him the same thing each time, "Stark-sama", which can loosely be translated as sir or mister or is used for someone who is older than the speaker. It's just a polite honorific for polite speech. Stark wanted her to treat him like someone her age, so he wanted her to call him "Stark-san", which is an honorific between acquaintances or those around the same age, or just "Stark" as a friend.
