I work at a gluten free bakery and we use 6c rice flour to 1c tapioca for our flour mix. The flour itself is super fine and light so all of our bakes come out super fluffy. It also can just be subbed into any baking recipe and works like a charm without xantham gum or any other additives. You don't need a sifter, just use a fine seive. It's easier, works better and it's not a one trick pony. And trust me, a stand mixer is still much better for incorporating air while creaming the sugar and fat. Your arms will die otherwise. It really does takes a good seven to eight minutes to cream properly. Makes a lighter and fluffier cake as well. You can get lightweight stand mixers that work just fine and are a fraction of the price of a freakin Kitchen aid.

Holy shit, I was able to curb my cake FOMO decently well until I saw pictures of JPC's cake. That looks amazing. Hilariously classic that Adal took the route that he did, and thank goodness Lou is okay! Erin's cake would've been so nice, I believe it!
