This is pure speculation on my part but it makes sense as far as we know. You can't see the change in eye colour unless you know the person is using an ability. Remember in e1, Lu Guang peers into the photo Emma took in front of Qiao Ling and she doesnt notice anything strange. Inside the photo, no one notices Cheng Xiaoshi's golden eyes even though they're close to whoever he possesses. BUT As soon as you know there's an ability in use, they show you the eye colours. A good example is that in the police station, Lu Guang turned to a wall to peer into a photo and the officers knew he had an ability. So why was he hiding his eyes from them when he didnt hide them from Qiao Ling before? Another example would be Cheng Xiaoshi knew Qiao Ling was possessed with an ability so he saw red eyes while up until Xiao Li figured out why Cheng Xiaoshi was going with Li Tianchen, he didn't see his eyes glow red. That only became apparent after the possession was revealed so.... In short, you can see the ability led change in eye colour only if you know a person is using an ability/is being used through an ability! More examples of this were shown in yingdu episodes 1 and 6 (syy tapping under her eye to signal her ability use which indicates that changes in eye colours can be seen by others)

As she showed via her drawing, aside from seeing memories of people in photo, her ability gives her an invisible corporeal form using which she can peer over people's shoulders. But she can only touch people...not things and she can't walk through walls and stuff. Using the fact that she's standing right behind people, Li tianchen manipulates her corporeal form into touching them, using a combo of their abilities to control people. In this way, it's not just xixi who touches them, it's Li tianchen touching them THROUGH her and therefore he can control them.

Cheng Xiaoshi meanwhile has only been training for real for less than a year so...
