In anime there will be a character that is obsessed with fighting strong opponents and they get freaky with their moans or lip licking and that's all hisoka is, a worthy opponent seeking battle freak. The reason he lets gon go is because he knows he'll grow up to be strong as hell and he only wants to fight strong as hell people. The reason he let kurapika and leorio go is because they've both grown in terms of strength and resilience since he last saw them. Also, Fruit being potential and unripe being they aren't at their max. Hope this helps, I mean you could just Google why hisoka is the way he is and get a better description than what I gave.
