The brood is probably having problems absorbing nutrients due to factors such as her immune system being very strong and the initial biomass the brood had to work with was limited. It could be also be that she might be being converted to a special type of infected designed to be mobile and move around more in public with the fat folds being a special gland or storage point for large amounts of alien spores to acumulate with the intent of performing large amounts of secondary infected. With secondary infected spores sending information back to the mothership to select potential future alien hosts.
