The hair was not a wig, they just used so much magical water that it made his hair fall off. In the manga it just kinda dissolved into the water. Natsu couldn't really attempt to defend himself from being eaten due to being unconscious. He's lucky owl's swallow their prey whole. That's all I can think of to say that isn't too spoilery. Obviously can't respond to your speculation on future events. All I can say is "Interesting..." There was a dialogue change, but pointing it out would ruin the work the anime's put in to improve foreshadowing for that thing.

Natsu couldn't really defend against the owl guy when he was unconscious. He's lucky that owls swallow their prey whole. Grey's lucky he tried to eat him while he was still conscious. If Owl had been more sneaky sneaky (like an assassin *should* be), they might have lost. That's all I can really say to this episode.
