"Did they 'un-princess' her?!" For child mortality reasons, a lot of things in life happen at least a few days but often YEARS after birth. For royalty, the formal coronation of the Crown Prince(ss), assuming they even do that, would be one of those things, so it's possible the King and Queen of Corona honestly just never got around to crowning Rapunzel, figuring they'd handle that when she was 6 or 7 or 13 or some other medically or symbologically sound age. Of course, even "compassing or imagining" the death of the Monarch, their Spouse, or any of their heirs is traditionally TREASON, so Rapunzel would always be ADDRESSED as a Princess, but LEGALLY... Also, Rapunzel's family probably DOESN'T actually have a name. They might have a "House" with a name that they and their extended family are considered a part of, but that's not quite the same thing. Family names are used to identify people who you AREN'T expected to know. Corona might well have thousands of Frederics and Ariannas, and walking down the street you might need to be able to distinguish between Frederic the Smith and Frederic the Baker but there's only ever ONE (living) King Frederic and Queen Arianna. It's also why, when you meet the likes of, for instance, Queen Elizabeth II or Pope Francis, YOU are "presented" TO THEM. THEY require no introductions. You have a pulse; you should know who they are.

Doubling security probably just means the guards that would be on break are working instead. You obviously couldn't have all of the guards working at the same time, they do need to sleep after all. Though if doubling the security is more long term than a couple big days then you probably would want to look at hiring more people.
