😀”Vertical food” and “trick food” was what my dad called the intricate plating and use of molds to form the dishes in a more vertical manner (as opposed to spread out on the plate). If you ordered a piece of macadamia crusted mahi-mahi, you’d be very likely to see your fish arrive stacked 3-4” vertically on top of sushi rice “napoleon style.” (And other such visually appealing arrangements of foods.)
