This is probably the most appropriate time to say this. This show so far covers through the end of volume 5 of the novels however, the deep dive into Gray's backstory doesn't begin until volume 6 and hasn't been animated (yet? copium?). For a more in depth explanation you could watch The Tale of Gray video by OtakuDaiKun on youtube after you finish the show. To make a long story short, the reason Waver called her a portrait is a reference to the novel "The Portrait of Dorian Gray" in which Dorian Gray has a portrait of himself that gets ill, injured and ages instead of his real self so long as he never looks at it. It was a plan by Morgan La Fae (Mordred's Mother a very complicated character who appeared very briefly in Mordred's backstory in Apocrypha), to revive Saber in the modern times by preparing a living body in which to place King Arthur's soul. Gray didn't originally look like Saber, but in 1994 when Saber was summoned for the Fate/Zero Grail War that same day Gray woke up and her face had changed into Saber's it is now 2003 and Fate/stay night is months away.
