So on the case of Servants remembering previous summons. Usually it's impossible for Servants to have their own memories of previous summons, and for the most part it true(Said to be impossible but it bullshit). However Saber Artoria was an exception because of the strong connection to Shiro who had Avalon, and her connection to the place she was summoned. It basically resummoned the same instance of her, if someone else had summoned her by some other means she would not have retained her memories. Also nearly all relevant events are recorded in the Throne of Heroes so a Servant can know past events up to their point in time, much like reading a report or book about the past. They won't have the memories of the event but they can still know what happened, and in special cases what happened in another timeline. For example in the future of Fate/Grand Order, Avicebron (Caster from Fate/Apocrypha) was summoned by Fujimaru, and he know the events of that Holy Grail War. How he killed his own Master for his Noble Phantasm, even though it was not the same instance of him. And he was so disgusted and disappointed in that version of himself that he used himself as the core of his gollum this time around. Also there are three other Servants that I know of that retained their memories of a previous summons. Arthur Pendragon Saber (Prototype so the male King Arthur), Arash Kamangir Archer (You saw him in FGO Camelot), and Ozymandias, Ramesses II (Also from FGO Camelot). These three are a special case, ever since the Holy Grail War they were in together. All other versions of them that are summoned will always retain their memories of that time and of each other, which is why they tend to have much respect for one another.
