ok so to explain: Ukitate and Shunsui (The 2 captains fighting Yamamoto) are both using their Shikai in that fight, as Yamamoto did ask them if they'd release their swords to at least have a chance at defeating him. I don't know if you caught this in previous episodes, but whenever a character say's they are going to release their Zanpakuto, or they say an incantation before saying the name of the Zanpakuto (not including when they say bankai), their sword transforms; that is Shikai. You've seen a similar example in the 2nd half of the episode with Soi Fon; she said the phrase "Sting all Enemies to Death" and proceeded to say the name of her Zanpakuto "Suzumebachi", that is how she uses her shikai. For Bankai: it differs from soul reaper to soul reaper, but they always require to state "Bankai" before its usage, and there can also be special cases where captains use their shikai with their bankai; as a regular example there is Tosen's Bankai where he first states "Bankai" and then continues with "Suzumushi Tsuishiki: Enma Koorogi". On the otherhand, we see when Byakuya uses his bankai against renji, he states "Bankai" then continues with "Scatter" and then "Senbonzakura Kageyoshi"; here, "Scatter" is actually his shikai release phrase (shikai release phrases can actually differ in length) and "Senbonzakura Kageyoshi" is his bankai in and of itself. In the case of Byakuya, due to the versatility of his Zanpakuto, the usage of Shikai within his bankai is expected.
