If I'm being honest, I think George will finish the Dunk and Egg series. Small short stories that he loves to write. Also I believe just recently that the show runner for a Knight of the Seven Kingdoms, Ira Parker did a QaA on the Game of Thrones subreddit reddit and was asked about the specific amount of story information George provided and he said 10-12 stories. The exact amount George has planned are 12 novellas. He provided an Outline for each story to be specific. I say this because I think you and Roxy were asking how many seasons you think the show would go and I believe 10-12.
