For me it kinda depends on what campaign you're playing in. For my own, beast races are really varied and even two from the same species can look wildly different on the anthropomorphic scale

Like with anthropomorphised cat people. I generally go for mainly human with animal ears, and maybe exaggerated legs or something. But more animalistic examples like Lugaru also work.

TwinGodess Miniatures is so amazing because it's different. If we start doing all female models human-shaped, it looses its charm. I'd go with something in between, like the lovely lola bunny (from space jam)

I'd also have to put in for usagi yojimbo, just adding ears doesn't make strike me as very rabbit person like, and adding gear to what is basically a large rabbit makes me think of a pack animal.

It all depends! I like the whole scale of cat to girl. They just need to have a great adventure pose. Cheesecake I prefer more girl then cat. Would be fun if you had a magic item gone wrong transformation. Then had girl girl with ears and tail then antho girl then cat.
