The only "assassin" thing you can see with Sanji is how he disappears and does stuff in the background. And even then, the only thing he's killed when on his own, was the Unluckies on Little Garden, whom were both animals.

Whale hair is Franky's all time best hairstyle, I love it XD I think a lot of people share your opinion on Sanji. Loved him in the beginning, the Mr. Prince stuff was fantastic, and after Water 7 he slowly became a parody of himself. So yeah, all of this development is kind of a welcome correction of his character. Also, the Brook Song was actually an original song by Brook's VA Cho that he made a few years prior to this episode: https://www.youtube.com/watch?v=T9eucF9DhZE It is just a silly song about a made up cat. But Oda liked it, so he decided to just add Nekomamushi / Cat Viper as well as the song itself to the story XD

Sanji always had a bit of a spy element about him; getting behind the scene and pulling strings while the rest of the crew got caught or were fighting. Stealth is kinda his thing, which is fitting given his family background.
