I wouldn't recommend eating leather shoes. While leather is edible, being made almost entirely of water and protein, most leather is tanned with harmful chemicals. Only possibility is somehow finding untanned leather, or leather tanned with natural vegetable tannins, but even then, "edible "doesn't equal to "nutritious".

Yeah, you can "eat leather" in the same way that you can drink your own urine. It's never something you'd willingly want to do, but because its technically true, it means that in a survival situation it's better than nothing.
