Thanks Kenji! I just had dinner and now I want some scrambled eggs! BTW, I bought one of those rectangular Japanese omelette pans in Tokyo a couple. Time permitting, can you do a piece on that sometime? Thanks!

I recall Julia Child doing something similar by folding the scrambled eggs back into the bowl the eggs were beaten in before serving. The residual egg cooked just a smidge. Can't wait to try this!
