This post is a Cookbook Club exclusive. Every month, we share recipe variations inspired by or following a certain blueprint. This dish is one of three inspired by the Gai Yang blueprint, alongside these garlic and herb-grilled and chile and citrus-marinated variations. Join the club to test these recipes alongside fellow Frienjis and provide direct feedback for my next cookbook!

Deeply savory, bright citrus, and zingy chile bring this grilled whole chicken to life.

Many of the world's best grilled chicken recipes follow the same basic pattern: aromatic ingredients, acid, salt, and fire. The details change from place to place, but the underlying idea remains remarkably consistent. This version takes inspiration from the citrusy, chile-spiced marinades used for pollo asado throughout Mexico and the American Southwest. I started making a version of this grilled chicken years ago when I saw Rick Bayless making it on one of his shows. I’ve been loving the flavor profile ever since.

Orange and lime provide brightness and acidity, while ancho chile powder combined with either chipotle or cayenne adds a little earthiness with a touch of heat and smoke. Oregano, garlic, and just a touch of warm spices round everything out. The result isn't particularly spicy, but it is deeply savory and aromatic, with flavors that seem tailor-made for piling into warm tortillas with onions, cilantro, lime, and your favorite salsa.

As with my gai yang blueprint recipe, the real secret is the cooking technique. Splitting the chicken in half and cooking it first over indirect heat and then over direct heat ensures juicy breast meat, fully cooked legs, and crisp skin every time. Once you've mastered that technique, changing the flavor profile becomes the easy part.

Yield: 4 to 6 servingsActive Time: 30 minutesTotal Time: 1 hour 30 minutes plus marinatingNotes: For best flavor, marinate at least 4 hours and up to overnight.

Ingredients

1 whole chicken, 4 to 5 pounds (1.8 to 2.3kg)

3 medium cloves garlic, finely minced or grated

3 tablespoons (45ml) apple cider vinegar

The juice and zest from 1 orange

The juice and zest from 1 lime

1 teaspoons (3g) ground ancho chile powder

½ teaspoon (1 1/2g) chipotle or cayenne chile powder

1 teaspoon (1g) dried oregano

Pinch ground cinnamon

PInch ground cloves

2 tablespoons extra-virgin olive oil

Kosher salt and freshly ground black pepper

MSG (optional)

Warm tortillas, fresh limes, onions, cilantro, and salsas for serving (optional)

Method

Remove the backbone from the chicken with poultry shears. Flip it over, press firmly to flatten it, then split it in half through the center of the breastbone. Thread two bamboo or metal skewers through each half, starting by threading them through the breast and toward the leg to hold the chicken flat.

Combine the garlic, vinegar, juices, zests, chile powders, oregano, cinnamon, cloves, and olive oil in the jar of a blender. Season generously with salt and pepper, and add a pinch of MSG (if using). Blend until smooth. (Alternatively, use a food processor.) Rub the marinade all over the chicken and refrigerate for a minimum of 30 minutes and up to overnight.

Prepare your two-zone fire. If using a charcoal grill, light one chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and arrange the coals on one side of the charcoal grate. Set cooking grate in place, cover grill and allow to preheat for 5 minutes. Alternatively, if using a gas grill, set half of the burners to the highest heat setting, cover, and preheat for 10 minutes. Clean and oil the grilling grate before you start cooking.

Place the chicken skin-side up on the cooler side of the grill with the legs pointed toward the hotter side. Cover and cook until the thickest part of the breast reaches about 140°F (60°C), 35 to 50 minutes.

Flip the chicken skin-side down over the hotter side of the grill, keeping the breasts slightly farther from the hottest area than the legs. Cook until the skin is crisp and lightly charred, the breast reaches 145 to 150°F (63 to 66°C), and the legs reach at least 170°F (77°C), about 3 to 8 minutes longer.

Transfer to a cutting board and let rest for 5 minutes. Remove the skewers, carve, and serve with warm tortillas, fresh limes, onions, cilantro, and salsas of your choice.
