Aah Betty's age increase was because of what you are seeing now, she was originally going to be used to snare Mr Jennings, but the Ladies Society decided her crimes where too bad. Beryl will stay in her 50's :)

Betty's definitely was more of a punishment. As with Beryl it doesn't seem that way at all especially being able to recall being 19. It's like the conditioning was set up for her to want this. Question is will she remember being 19 or get the total identity rewrite/brainwash at some point like paige and zoe did
