Speaking of Mormons and names, a lot of people don't know that Utah has some of the strangest names in America. My large extended Mormon family still lives there and I can confirm these names actually exist and are not a joke. Part of it is due to the influence of the Book of Mormon, which features names made up by Joseph Smith (Moroni, Nephi, Mohonri Moriancumer), and also as you said it was one of the few ways religious housewives could be creative. https://www.utahbabynamer.com/index.php/2018/04/02/the-top-20-most-utah-utah-names-of-all-time/ https://bycommonconsent.com/2016/03/28/mormons-name-their-kids-the-darnedest-things-born-in-2015-edition/

"Jefferson Davis" was the founder of the confederacy which is one reason so many places in the american southwest are named Jefferson. Similarly places named Forrest are usually named after Nathan Bedford Forrest, first grand wizard of the KKK and a general in the Confederacy.
