Celines Song is very melodic. Maybe the easiest to play. Eminem could be pretty hard. I mean, playing the riff is pretty fun, but creating a cool song-arrangement is a serious challenge. The surf-song is a real sukui-killer-workout - it would be my favourite. :-)

I guess all 3 songs can be covered. However: the cover of the first song might be a bit "empty" if we play shamisen at the moments when the singer sings a new syllable. Shamisen strings will fade away quickly. The last song cover will be too repetitive. The second song is based on a guitar which is a string instrument as well as a shamisen, so that seems the best option, however, it will be full of tremolo, might be a bit hard.
