Camels are excellent mounts, far superior to horses when it comes to their ability to survive in a desert environment. (Though they do require a great deal of training to handle as demonstrated in this episode). That's part of why the British used them in their colonization of Australia. Hell even the United States Army established a Camel Corps between 1856 to 1866.

I don't think we've seen Jotaro fully laugh before this, but we've seen him smugly chuckle at opponents a few times.
