Couple of things to note: -The title is called "Five Obstacles." This episode is set up to show the obstacles Subaru needs to overcome to beat the tower. The five obstacles are: 1. The Mabeast 2. Gluttony 3. Reid 4. Shaula 5. Satella -For why Shaula turns into a scorpion They actually mentioned this way back in episode 5 when Shaula was explaining the 4 rules which are: 1.its forbidden to leave the tower 2.its forbidden to violate the rules of the trails 3.its forbidden to disrespect the library 4.its forbidden to damage the tower Then she says if any of the rules were broken she "I'll transform into a heartless killing machine instantly" She transformed due to the rule being broken, which is most likely rule 4 don't destroy the tower. -As for Subaru's Greed Authority, it's not as much as Soul read, but the hint is what Rem said "Save everything, everyone even the stranger closest to you" if you look closely, the only people Subaru did not see are Gluttony and Reid. Let`s say that without giving specific spoilers, that Anime-only people will have to wait a long time to get more info about Gluttony. We don`t get any more major or important info in the main content until Arc 9.
