If I don't remembered it wrong, the grief seed Madoka used to save Homura is actually Sayaka's grief seed.

After this episode you get way more context to a lot of things and that includes the opening of the show. The lyrics make a lot more sense now after seeing Homura's flashback and the life that she is living now as well as what she wants to change.

Fun fact #1: Homura means flame. The word for hot and the word for being passionate are both moeru, which is what Madoka advises to Homura in that scene. "Your name reminds me of heat, so you should become passionate to match!" Since that leap doesn't translate that well in the subs, they went with "cool", which also works Fun fact #2: The cat in the opening? It got run over by a car. And Madoka's wish in the first timeline was to revive the cat. What's also interesting to note is how the Madoka showing Homura to the nurse's office scene is almost completely flipped to how it happened in episode 1, complete with the shot of Madoka's feet as she turned around. At first it's a bit weird to see a headstrong, confident Madoka in this episode when compared to the Madoka we've been seeing in the past episodes, but it does make sense. Fighting witches from the shadows, being Mami's apprentice, doing a hero's work, just having a purpose would obviously give Madoka more self-confidence. The problem is that Homura's quest, while noble and entirely understandable, ultimately keeps Madoka away from that development and would leave her the shy, quiet girl who is only somewhat confident in herself and her actions when she's with her friends and/or family.

If I understand correctly, the Grief seeds don't always drop from witches when they are killed. Sooner or later your luck will run out.

Just saying that isn't true. A witch always drops her grief seed. It's where the corrupted magical girls soul is stored after all. A familiar, or something that isn't a witch. of course won't have a grief seed. The inevitable fate of surviving magical girls turning into witches is more due to mental fatigue, or using up all their magic.
