The higher princess and princes are all like 25 or so years apart from the next. So it just seems weird to me that there’s a large jump. I guess they could have just decided to have more after a bit.

I personally don't see anything weird with it. Not when they're thousands of years old and their physical appearances don't really change.

This raises the opposite question, if they're thousands of years old, why is the eldest child only 200 or something? Did they have children before that that died? Either killed or didn't manage to reach high enough level and died of old age? Or did they refuse to have children until those 200 years ago? Actually, they must be extremely careful (that may not be the best word here. Maybe "selective as to when they decide to have a kid" would be better?) to not have hundreds of kids over all those years.
