I dont want to spoil WHO egg, aerion, etc is, how it relates to the mad king and all that. But I do want to just give the disclaimer that GoT's Targ family tree differs from the books. And that this show is likely following the books family tree not Game of Thrones. If you want a spoiler free answer to how they differ, I can give that too. But didnt want to go further without yalls consent.

The Iron Islands and Dorn are both considered separate entities from the other seven kingdoms, so while there are nine kingdoms in Westeros, the Seven Kingdoms is a historical/cultural division.

Adding to that: the Iron Islands and the Riverlands were one kingdom at the time of the Conquest (Kingdom of Isles and Rivers), so there were seven kingdoms that Aegon conquered to become the "King of the Andals, the Rhoynar, and the First Men". This *does* include Dorne, because the Targaryens always considered it their territory lol despite it only becoming officially part of the Seven Kingdoms much later. After the conquest, the Iron Islands and the Riverlands were split again and became two separate constituent regions (making it 8 kingdoms), and then Aegon created the "Crownlands" to be the crown's center of power (making it 9)
