So the lord of winter is usually beat via a battle of attrition. It normally takes days to incapacitate, then they take their time butchering it for whatever materials they can get because if they kill it the way Rozemyne did, as you saw it just turns into a feystone. This time they needed a feystone purely dyed with her mana for her jureeve so even though it only took a few hours this time, they lost a lot of resources

Also, another thing about the Lord of Winter, it 's kind of a natural phenomena. It's the name of the strongest and most predominant Feybeast of that winter, that evolved to become that strong (like the Goltze they fought during the autumm gathering, but to the extreme). It happens every year to a different beast and it's so powerful that creates a snowstorm as you saw. The knights fight it every year not only because they can't let a beast so strong rampage around, but since it changes the weather, it makes winter colder and longer the more it is alive. It is really unnusual to use Leidenshcaft's like they used it here, first because the crazy amount of mana it requieres, but also for the rather unnusual relationship nobles have with the temple; they respect the gods and consider their tools sacred, so using their tools tribially could be seen as blasphemous, but at the same time they disregard the temple as they see it as a place they send rejects without enough mana to becomes nobles or as a brothel where you can pay the high bishop to sleep with grey priestesses -that's why it's improper for noble ladies to go there- so nobody would think there is anything of value there. In fact, most nobles from the city would think the divine artifacts are mostly ceremonial, as besides the chalices they don't see much use. It is only Ferdinand who would think to use the spear like that, and he couldn't do it before because it was impractical -due to the mana requiered- and because the previous High Bishop would have opposed it.
