They tape her eyes down to protect her eyes. When a patient is unconscious, under anesthesia, etc., their eyes sometimes aren't fully close, when that happens their eyes can dry out because they aren't blinking enough to keep them moist. So, they tape their eyes down and it's also good to protect their eyes in general from chemicals or anything else that can get in them.

I think it truly is a testament to the cast and crew with how amazing this show turns out. Many of them know their characters and when so much of the crew have been on the show for multiple seasons, I think you can see the care they have for the show…no matter what the powers may be fuck up in the background.
