I think they give you so many companions because there's a million different ways they leave by being pissed at the player character and you just lose them forever.

Relating to content and the struggle of trying to see everything in the game during one playthrough... this is what I recall. Companions don't get true character quests until BG2, so you don't have to worry about missing much in BG1 by not getting all the companions. (The Beamdog companions may break this rule, I'm not sure about them). Once you get to BG2, every companion has a quest you can only do while they're in the party. These are usually pretty interesting and can seriously buff the companion involved, or have other ramifications. In BG1 the most you get are extra lines of dialogue if someone is with you when taken to a certain place related to their lore. I don't think Minsc even commented when you found Dynaheir... Also, the transition from BG1 to BG2 doesn't work the same as the ones in later Bioware games. You only bring your character with you to the second game, you basically choose how to frame your interactions with characters from game 1 based on how you react in your dialogue when you meet the characters in game 2. (like choosing to say "don't you recognize me after all the time we spent together" or "hey, didn't I kill you?" (meta tip: any permanent stat buffs you can find in game 1 are best applied to your character, they won't carry over to game 2 on a companion.) All that to say you don't have to worry too much about playing BG1 perfectly, decisions outside of your own leveling won't follow you, and the canon party will always be the same at the start of BG2. Caveat that this is all just as I remember, I could be mistaken on some things.
