When Elliot talks like that (when no one is around), he is talking to us the audience. At least, that is my take on it.

Since they were on a time crunch to get the Steel Mountain job done, they couldn't wait for Elliot to get clean. He did have to have a hit to "get right" enough to do the job. He could then get clean afterwards. What's best for Elliot is to get clean, but he didn't know he would have to do the job within the next day. Heh, I just realized the "restaurant" they were in in Elliot's hallucination is their workplace, with the cubicles.

In hindsight, knowing what I know now, Elliot's trip (and you're not supposed to understand it right away 'cause...he's trippin') makes sense. But, you have to have a wider view to decipher it.
