Lies of P is kind of like if Sekiro and Bloodborne had a child named Pinocchio. Easily the best game in its genre not made by From Software.

Tony I know you've always been aware of Dark Souls/Elden Ring/Bloodborne games but decided they're not for you in terms of difficulty and the resulting time investment to get through them, but Lies of P got a free update mid last year that added two new reduced difficulty settings for accessibility. I love this game, but with the original difficulty would be apprehensive about recommending it to you, but with this update I can emphatically recommend it to you. It's an action game set in an industrial revolution era Italian city where the miracle of puppets have been created to enhance people's lives, at least until they suddenly went wild for reasons unknown.
