The flash forward of season 2 is supposed to contrast with the ending of the episode. Saul/Gene cannot open the door because the police will be called and he could be exposed. This goes against his inclination to break rules, as evidenced with him flipping the switch at the end.

There are several references to Breaking Bad in these two episodes. S1E10: Saul mentions sending Hank to "Belize" like he did with Mike. He also tells Walt that he once convinced a woman that he was Kevin Costner because he believed it. S2E1: The douchebag broker, Ken, is the guy whose car was blown up by Walt in season 1. The liquor that they drink is what Gus gave to the cartel when he poisoned them.

The Granny Smith’s just sent me into flashbacks 😂. I use to pick them from my grandparents backyard. My grandmother use to fry / sauté them in butter, a little sugar and brown sugar and a dash of cinnamon. And eat them right along side good old fashioned fried squash and other stuff straight from the garden. I make them once in a while these days. They also make the best fried apple pies. The switch is there for symbolisms Mr Boyd. Its a metaphor for the James McGill vs Slippin Jimmy vs Saul Goodman internal battle. Even when things are seemingly going well for him, he just can't help himself and indulges the urge to break the rules. In this case, ignoring the label, and flipping the switch, just to see what happens.

Non spoiler trivia for you guys. I am from Richmond VA like Vince Gilligan. He chose name Davis and Main for the law firm after a restaurant in Richmond. If you pay attention to when states get mentioned in Breaking bad or BCS, Virginia is almost always mentioned.

One of the best prequel series if not the best of all time. Just enjoy the ride. Maybe get a moderator to make sure no one spoils anything because trust me. Even thought you saw breaking bad which did come before bcs. there are still plenty of things that can be spoiled.
