Ingredients

Chicken Breast (atleast 1/2 Pound Per Sandwich)

Brine (1 cup Milk, 1/2 cup sugar, 1/2 cup salt for one pound of chicken)

1/2 Red Pepper

1/2 Sweet Onion

Butter

Mexican Shredded Cheese

Buns

Chipotle or Mexican Seasoning

Applewood Seasoning

Flour

Mayo

Directions

1) The night before you wanna make these, put your chicken breasts into the brine. Stick a bowl of this into the fridge, then come back for them in two hours or the next day.

2) Chop up your onions and peppers into bite size pieces. Remove your chicken breasts from the brine and roll around in applewood seasoning. Add your own seasonings if desired, but what really set this sandwich off is the tangy applewood mingling with the flavorful chipotle sauce.

3) Begin heating your oil to 350 degrees. Add chipotle seasoning and applewood seasoning (about 1 tablespoon per cup) to flour and mix in a plastic or brown bag. Add your chicken breast to this flour mix. Add to your hot oil, making sure that the oil is not too hot. The chicken should sizzle lightly, but should not be too aggressive yet.

4) While your chicken is frying, add butter to a skillet before adding a bit of garlic. Dump in your bite size onions and peppers, and cook until the onions are translucent and the peppers have a bit of char on them. You should have a bit of excess butter fat collecting in the pan. If not, add a little more butter and allow it to melt.

5) Pull up your chicken when it is done and let it cool off. Mix a half cup of of mayo with two tablespoons of chipotle seasoning, and add a little of your pan butter fat into it. Mix it up.

5) Chop up your chicken. Stack the meat high on toasted buns with sauce, cheese, and onions and peppers. Enjoy!!
