I got a lot of requests for this, so here it is. I've been trying to perfect my own creamed spinach recipe since college and I finally did it a few months ago. It's the bomb.

Ingredients for 2-3 Servings

1 bag fresh spinach, chopped

1/4 cup chopped sweet onion

1/4 cup chopped shallot

1 tablespoon flour

2 tablespoons butter (to be used separately)

1 oz cream cheese

1 cup grated (preferred, but you can use shredded) parmesan cheese

1/8 cup heavy whipping cream (I honestly eyeball it so this may be inaccurate, but you can simmer it down or add extra cream if you do too much or too little)

Salt

Pepper

Garlic Powder

Directions

Melt 1 tablespoon butter and saute shallot and onions on medium-high heat until soft and they begin to brown

Turn burner to medium and add chopped spinach. saute until it is cooked all the way down

Add cream cheese, stir, this will be annoying and will likely get stuck on your spoon but let it melt and brown a little

Then, move all of the cream cheese and spinach to the side and make a roux with 1 tablespoon of flour and 1 tablespoon butter.

Then mix the roux with the spinach and cream cheese. Add salt, pepper, and garlic powder

Bring it all together with heavy cream and simmer to desired consistency
