IDK if you were told already, but Ghorantl is basically the studio pussying out on namedropping Israel like in the source material (they did the same w/ Volgarena, which you can probably guess is USSR/Russia based on all the commie terms used etc by the mfs from there). I presume Motoko's about your standard fullbody cyborg of meatbag. So the brain + stem + maybe a bit of the upper spinal cord (depending on how necessary for their cyberware tech some of the spinal cord is of course)?
