Ingredients:

  • 2 eggs

  • 8oz egg whites/egg beaters/whatever they're called

  • 3-4 taco-sized flour tortillas

  • 1tsp olive oil

  • salt

  • pepper

  • garlic powder

  • paprika

  • cumin

  • (optional) guacamole

  • (optional) Spam, sliced and pan-fried

Prep:

  • Whisk together eggs, egg white, salt, pepper, paprika, cumin, and garlic powder and allow to rest while everything is being prepped.

  • heat a cast iron pan (or whatever you've got) to medium or medium-high and allow to come up to temp for 1-2 minutes. Once the pan is warm lightly toast tortillas one at a time without any oil. you'll know when they're heated when they puff up a little. Remove heated tortillas to plate.

  • (Optional) add about 1.5oz of guacamole to the bottom of each tortillas

  • (Optional SKIP IF YOU WANT TO KEEP THIS DISH VEGETARIAN) Slice spam into thin 1-2oz strips per taco you plan to make. Cook in pan on medium heat, turning once until both sides are browned. When done, remove slices of spam to paper towel-lined cutting board to drain and then slice into thin strips. Add to tortillas.

  • (If you did the spam, you don't need to add oil since spam is so greasy that it'll oil your pan for you) add 1tsp oil to pan and allow to coat. give your egg mix one last good stirring to make sure that the spices don't stay at the bottom of the bowl before pouring into the pan. Let cook for 1-2 minutes before pushing egg mix back in pan to allow for uncooked egg on the top to have direct contact with pan.

  • When eggs are only slightly runny, use spatula/turner to split scrambled eggs into thirds/fourths before portioning directly into tortillas. Use spatula to break up eggs inside the tacos to avoid losing any egg.

  • This looks like a lot but all of the above takes less than 15 minutes. You got this.
