Yeah, this is a great episode. So much of the lore and tone for the show is established here. Mulder & Scully working as a duo = the heart of The X-Files. We get Mulder exposing Scully to new ideas and Scully doing her best to keep Mulder grounded in reality. Also, gotta love the introduction of The Lone Gunmen. :) Oh, and we noticed you flirting with Scully, Mulder. Don't think we didn't notice (even Scully though pretended not to).

That's non-dairy creamer Scully is putting into her coffee. I don't drink coffee but that's definitely what that is.
