Dongsaeng means younger sibling. Moonbyul was basically saying what you were thinking, but just phrasing it differently. Instead of saying Solar would be the maknae, she was saying she'd be Umji's younger sister, which is the same thing.

I don't know much about extra gfriend content, the only big ones I know of are on their official channel, where they do a reality show series "Memoria". Those have three episode per arc, and they're pretty long episodes (25-40 minutes or so). Of course they also do normal vlog stuff and covers over there as well.
