Recently, I've been blown away by an open-source anatomy atlas project for Blender called Z-Anatomy. It's a comprehensive (and interactive) project that lets you explore different aspects of the human body from inside of Blender, providing educational information on what you have selected, while also serving as an excellent 3D reference for artistic study.
